Mini Waffle Omelets

If you’ve been looking for a new way to use your mini waffle maker, you have got to give these waffle iron omelets a try! With just a few simple ingredients, eggs in a mini waffle maker turn into a delicious omelet and are a breeze to make. Naturally gluten free and omitting any cheese makes these dairy free as well.

The flavor combinations are endless and is a great way for everyone to customize what they want in their eggs. Whatever you happen to have on hand will work.

Ingredients for Mini Waffle Omelets

  • Egg
  • Filling of choice (finely minced)
  • Shredded Cheese (optional)
  • Salt & Pepper, to taste

Filling Variations

  • Meats: Ham, Bacon, Turkey Bacon
  • Veggies: Onion, Scallion, Mushroom, Peppers, Jalapeño 
  • Cheeses: Cheddar, Mexican, Swiss, Havarti (omit for dairy free)

How to Make Mini Waffle Omelets

  • Preheat your mini waffle iron according to the manufacturer’s directions
  • In a small bowl, whisk one egg and add salt/pepper to taste
  • Next, finely dice any fillings and add 1 tablespoon of filling to egg mixture
  • If using, add up to 1/2 tablespoon of shredded cheese
  • Whisk together egg and filling
  • Pour into waffle iron and cook for 2-3 minutes

Tips for success

  • Use only 1 tablespoon of filling, more will cause overflow.
  • Omit cheese for a dairy free option or use your favorite dairy free cheese.

Serving Suggestions

  • Serve with a side of bacon, sausage or ham.
  • Pair with fresh fruit or a fruit salad
  • Top with additional cheese
  • Sprinkle with parsley or chives

Easy omelet baked right in a mini waffle iron

Ingredients

  • 1 Egg
  • 1 Tablespoon finely minced meat/veggies
  • 1/2 Tablespoon shredded cheese (omit for dairy free)
  • Salt and Pepper, to taste

Instructions

  1. Preheat your mini waffle iron according to the manufacturer’s directions
  2. In a small bowl, whisk one egg and add salt/pepper to taste
  3. Next, finely dice any fillings and add 1 tablespoon of filling to egg mixture
  4. If using, add 1/2 tablespoon of shredded cheese
  5. Whisk together egg and filling
  6. Pour into waffle iron and cook for 5-7 minutes
