Ready in under 15 minutes, with no refined sugar (just a touch of honey), it is the perfect dessert for a hot summer day. You could even top it with some fresh whipped cream!
Ingredients for this Fruit Salad with Orange-Mint Dressing
- Strawberries – hulled and quartered
- Blueberries
- Kiwi – peeled and diced. Ripe kiwi should be slightly soft when pushed on with your thumb.
- Red Seedless Grapes – halved
- Navel Orange – Juiced – A small juicer like this one will get the job done.
- Fresh mint leaves
- Honey
How to make fruit salad with Orange-Mint Dressing
- Prepare the fruit by washing and cutting up into bite size pieces.
- In a medium sized bowl, add all the diced fruit and set aside.
- In a small jar with a lid, muddle the mint leaves in the bottom. Add the orange juice and honey.
- Shake well to combine.
- Pour the dressing over the fruit, straining out the mint leaves.
- Mix well, coating all the fruit with the dressing
- Serve

TIPS AND SUBSTITUTIONS
- Make sure all fruit is cut up evenly and bite size
- Other fruits can be substituted or added. Try blackberries, mandarin oranges, peaches or pineapple.
- Unless consuming immediately, avoid apples or bananas as they will brown quickly
