Pineapple Mint Vodka Fizz

Looking for an easy, refreshing cocktail that you can sip on all spring and summer? Maybe for a brunch or even a Saint Patrick’s Day party? Then this easy and green Pineapple Mint Vodka Fizz is it!

A light, refreshing vodka cocktail, with pineapple juice, hint of mint, lightly sweetened and a fun green color. Topped off with some lime flavored seltzer water, it has a perfect blend of flavors that will have you making it again and again.

What is more fun than a green drink? This drink uses just a little bit of Blue Curacao to get that gorgeous green color. It is an orange liqueur and adds some citrus flavor.

Ingredients needed for Pineapple Mint Vodka Fizz

  • Ice
  • Fresh Mint Leaves
  • Pineapple Juice
  • Vodka
  • Blue Curacao: This is what gives the drink it’s green color! It is a blue liqueur made from the peel of bitter oranges.
  • Simple Syrup (optional if you prefer drinks a little sweeter)
  • Lime Flavored Seltzer/Sparkling Water

How to make a Pineapple Mint Vodka Fizz

  1. Fill 2 highball glasses with ice, set aside
  2. Muddle mint leaves in the bottom of a shaker and then fill half way with ice.
  3. Add in the pineapple juice, vodka, blue curacao and simple syrup (if desired).
  4. Shake well
  5. Pour over the ice, dividing between the two glasses. Top off with lime flavored seltzer

Tips and Substitutions

  • If you do not own a muddler, you can use a wooden spoon
  • No shaker? Just use a glass jar with a tight fitting lid.
  • Make sure you’re using 100% pineapple juice with no sugar added. I use Dole and buy it in their 6 ounce cans for convenience.
  • Tito’s is my go to brand for Vodka, but any other brand will work just fine.
  • If you do not have blue curacao, I would try substituting it for triple sec. They aren’t identical in flavor but both have an orange flavor. Note: If you do substitute this, your drink will not be green.
  • Any lime flavored seltzer/sparkling water will do. I most often have LaCroix or Polar in my fridge. Unflavored or club soda will also work.

Pineapple Mint Vodka Fizz

Ingredients

  • 4-6 mint leaves
  • 4 ounces Pineapple Juice
  • 3 ounces Vodka
  • 1 ounce Blue curacao
  • Lime flavored sparkling water or club soda

Instructions

  1. Fill 2 glasses with ice, set aside
  2. Muddle the mint leaves in the bottom of a shaker
  3. Fill shaker half way with ice
  4. Add in the pineapple juice, vodka and blue curacao
  5. Shake well
  6. Pour into glasses evenly
  7. Top with Lime flavored sparkling water or club soda
