Baked oatmeal is one of my family’s favorite breakfasts! It’s not at all like stove top oatmeal. It is almost like bread pudding. Thick and moist, but definitely not gooey.

This Chocolate Chip Banana Baked Oatmeal smells and tastes just like Banana Bread, so if you’re looking for a new way to use up ripe bananas, give this recipe a try!

I love to prep baked oatmeal and have it ready to serve throughout the week. We are kind of obsessed with it as you can see from our other baked oatmeal recipes like this Cranberry Apple one!

Ingredients for Chocolate Chip Banana Baked Oatmeal

  • Rolled Oats – certified gluten free if needed
  • Baking essentials – baking powder, salt, vanilla
  • Spices – Cinnamon, Cloves and nutmeg
  • Almond Milk – unsweetened plain or vanilla
  • Bananas – Ripe with lots of brown spots!
  • Maple Syrup
  • Eggs
  • Chocolate Chips – Allergen friendly to keep this recipe dairy free. I like using this brand of chocolate chips

How to Make Chocolate Chip Banana Baked Oatmeal

  • Preheat oven to 350°F
  • Lightly grease an 8×8 square baking dish
  • In a large bowl, combine the rolled oats, baking powder, salt, cinnamon, cloves and nutmeg. Whisk to combine.
  • In a small bowl, beat the eggs and set aside
  • Add the mashed bananas, milk, vanilla, maple syrup and beaten eggs to the large bowl with oats. Mix well.
  • Add the chocolate chips and mix in.
  • Pour oat mixture into prepared baking dish.
  • Bake for 45-50 minutes until top is golden and center is set.

Serving Suggestions for Baked Oatmeal

  • Top with banana slices
  • Serve warm drizzled with maple syrup
  • For extra protein, serve with a dollop of Greek yogurt (or dairy free alternative)
  • Add some chopped walnuts to the top or drizzle peanut butter
  • Serve with berries or a fruit salad on the side

Storing and Reheating Baked Oatmeal

Baked oatmeal can be stored in the fridge for up to 5 days. Alternatively, you can cut in to 6 servings, place in an airtight container and store in the freezer for up to 3 months.

To reheat, place in the microwave on a microwave safe plate and heat on high for 1-1:30 minutes. Until heated through.

Banana Chocolate Chip Baked Oatmeal

Ingredients

  • 2 cups Rolled Oats
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 1/8 teaspoon Nutmeg
  • 1/8 teaspoon Ground Cloves
  • 3 Ripe Bananas, mashed
  • 1 3/4 cup Almond Milk, Unsweetened
  • 2 eggs, lightly beaten
  • 2 Tablespoons Maple Syrup
  • 2 teaspoon Vanilla
  • 1/2 cup Chocolate Chips (allergen friendly)

Instructions

    1. Preheat oven to 350°F
    2. Lightly grease an 8x8 baking dish.
    3. In a large bowl, combine the rolled oats, baking
      powder, salt, cinnamon, cloves and nutmeg. Whisk to combine.
    4. In a small bowl, beat the eggs and set aside
    5. Add the mashed bananas, milk, vanilla, maple
      syrup and beaten eggs to the large bowl with oats. Mix well.
    6. Add the chocolate chips and mix in.
    7. Pour the oat mixture into your prepared pan.
    8. Bake for 45-50 minutes. The top should be
      lightly golden and the center will be set.
