Healthy Cranberry Apple Baked Oatmeal

This healthy baked oatmeal is naturally sweetened and features cranberries, apple plus lots of warm spices. Cranberry apple baked oatmeal is perfect for a winter morning so you can feel cozy and fueled for the rest of the day!

This baked oatmeal was the answer to getting a healthy and nutritious breakfast in my kids on those busy school mornings. Made ahead of time on the weekend, I reheat individual portions, drizzle with maple syrup, a little bit of milk and life becomes that much easier.

It is refined sugar free, packed with wholesome ingredients and bursting with flavor. Sweet apples, tart cranberries and warm spices like cinnamon, nutmeg, ginger, allspice give this a cozy winter feel. Not to mention your kitchen will smell Ahhh-mazing! A perfect breakfast that everyone will love and you can feel good serving!

For added protein, you can top this with a dollop of Greek yogurt, nut butter or you could also add some nuts (walnut or pecan) to the top for serving.

Ingredients for Cranberry Apple Baked Oatmeal

ROLLED OATS– Old fashioned rolled oats(not quick oats) are the main ingredient. If you need this to be gluten free, make sure to check your labels and get certified gluten free.

SPICES– Cinnamon, ginger, allspice, cardamom, cloves and nutmeg give this oatmeal a gingerbread scent which pairs perfectly with the cranberries and apples.

FRUIT– Frozen cranberries and diced apple give this dish a wintry feel. They are a perfect combination of sweet and tart!

SWEETENER – Pure maple syrup is used to lightly sweeten the baked oatmeal. Honey can be used in its place if desired.

MILK– I use whole milk however, unsweetened almond milk (or any other nut milk) can be used in its place.

EGGS– These act as a binder to keep the oatmeal in casserole form.

ADDITIONAL INGREDIENTS – Baking powder, salt and vanilla.

How to Make Healthy Baked Oatmeal with Cranberries and Apple

Preheat oven to 350°F and lightly grease a 8×8 baking dish.

Sprinkle about half of the cranberries and apple on the bottom of the dish.

In a large bowl, mix together rolled oats, baking powder, salt, cinnamon, ginger, allspice, cardamom, cloves and nutmeg.

Spread the rolled oats evenly over the cranberries and apple.

In a separate bowl, whisk together milk, eggs, vanilla and maple syrup.

Pour the combined ingredients over top of the oats.

Top with remaining diced apple and frozen cranberries.

Bake for 40-45 minutes or until oatmeal is set.

Let cool 10 minutes before serving.

  • 1/3 cup Frozen Cranberries
  • 1 small Apple, Diced
  • 2 cups Rolled Oats
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Ground Ginger
  • 1/4 teaspoon Ground Allspice
  • 1/4 teaspoon Cardamon
  • 1/4 teaspoon Ground Cloves
  • 1/4 teaspoon Nutmeg
  • 1 3/4 cups Whole Milk (or unsweetened Almond)
  • 2 Eggs
  • 1/4 cup Maple Syrup
  • 2 teaspoons Vanilla

Instructions

  1. Preheat oven to 350°F and lightly grease a 8x8 baking dish.
  2. Sprinkle about half of the cranberries and apple on the bottom of the dish.
