Easily prepped or doubled to eat for the week. It will become your new favorite breakfast. Delicious on its own or topped with an over easy or fried egg!
If you’re like me and enjoy lots of spice, add some red pepper flakes when ready to serve!
This recipe is also very easily adaptable to be gluten free, vegetarian, vegan and whole30. See the tips and substitutions below for adaptations.
Ingredients for Sweet Potato Breakfast Hash
- Sweet Potatoes
- Red Onion
- Garlic Cloves
- Brussels Sprouts
- Olive Oil
- Broth (chicken or vegetable)
- Coconut Aminos (see tips and substitutions)
- Breakfast chicken sausage (optional) – I use Applegate Naturals No Sugar Chicken and Herb or Aidells Chicken and Apple.
- Optional add ins: Red Pepper flakes, Over easy or fried egg
Directions to make Sweet Potato Breakfast Hash
- Heat the olive oil in a skillet over medium heat
- Saute the diced sweet potatoes and cook for 10 minutes
- Add the onion, garlic, brussels sprouts and saute for 5 minutes.
- Add the broth, coconut aminos and pre-cooked sausage (if using), then stir to combine.
- Simmer for 5-10 minutes until liquid is cooked down and vegetables are fork tender.
- Serve with an optional fried or over easy egg and some red pepper flakes.

Tips and Substitutions
- When dicing your potatoes, try to get them all the same size so that they will cook evenly.
- Soy sauce may be swapped in for coconut aminos.
- Gluten Free adaptation – If you are using soy sauce, use a certified gluten free brand and check labels on the breakfast chicken sausage.
- Vegetarian adaptation- Use vegetable broth and omit the breakfast sausage. If desired, swap in a plant based sausage.
- Vegan adaptation – Use vegetable broth and omit the breakfast sausage or swap in a vegan/plant based sausage.
- Whole30 adaptation – Use broth that has no added sugar. Use only the coconut aminos (no soy sauce) and a chicken sausage that has no added sugar such as Aidells Chicken and Apple Sausage.
