As soon as it hits September, I am ready for Fall. Are you? I know it is still hot out, but I can’t help it. I’m an autumn girl! I love all things pumpkin/pumpkin spice and so these Chocolate Covered Pumpkin Spice Cereal Bars were a no-brainer!

At the end of August, General Mills releases their Pumpkin Spice Cheerios and I always grab several boxes because they are so. dang. good! Trader Joe’s has them too (also ridiculously delicious), but we don’t have a TJs close by and so I don’t get them often.

My inspiration for these no-bake bars is from the Cheerios website under their recipes section. They have a cheerios marshmallow cereal bar. What could be better than Pumpkin Spice Cheerios, marshmallows and chocolate?? Nothing.

Ingredients for Chocolate Covered Pumpkin Spice Cereal Bars:

This easy treat only needs 4 simple ingredients!

  • 3 tablespoons butter plus more for greasing dish
  • 1- 10 ounce bag of mini marshmallows (approximately 6 cups)
  • 5 cups of Pumpkin Spice Cheerios
  • 2 cups of Chocolate Chips

Directions:

  1.  Grease a 9×13 baking dish with butter
  2. In a large microwavable bowl, melt the butter
  3. Add in the marshmallows and microwave for 1 minute. Stir to combine and microwave in 30 second increments until marshmallows are melted.
  4. Stir in the cereal and mix well.
  5. Turn mixture into greased 9×13 dish and spread out evenly.
  6. Press down firmly using the back of a buttered spoon or your hands.
  7. Let cool in refrigerator for 1 hour
  8. Remove from fridge and set aside.
  9. Melt the 2 cups of chocolate chips either over a double boiler or in the microwave (1 minute on high, stir and then continue in 30 second increments until fully melted)
  10. Quickly spread the chocolate on top using a spatula
  11. Let cool completely (until chocolate hardens) before cutting. I placed mine in the fridge to speed up the cooling.

Chocolate Covered Pumpkin Spice Cereal Bars

Cool Time: 1 hour 30 minutes
Total Time: 1 hour 35 minutes

Ingredients

  • 3 tablespoons Butter, plus more for greasing pan

  2. In a large bowl, melt the 3 tablespoons of butter
  3. Add the marshmallows, stir to coat.
  4. Microwave the marshmallows for 1 minute. Stir and then continue in 30 second increments until fully melted.
  5. Turn mixture out into prepared pan. Press down firmly with the back of a buttered spoon or hands
  6. Set aside to cool in fridge for approximately 1 hour
  7. Once completely cooled, Remove from fridge and set aside
  8. Melt the chocolate chips in either a double boiler or in the microwave (on high for 1 minute and then 30 second increments until melted)
  9. Quickly spread the chocolate over the cereal bars with a spatula
  10. Set aside to cool completely before cutting. The fridge works great to speed the cooling time up.
