Pumpkin Pie Bites

These Maple-Bourbon Pumpkin Pie Bites are everything you love about pumpkin pie, but better! Don’t get me wrong, I love the classic, but this one is sweetened with maple syrup and flavored with a hint of bourbon, all in one perfect bite. You won’t be able to eat just one, trust me, I know.

Don’t forget to top them off with Cinnamon Bourbon Whipped Cream! It is the perfect topping.

These take very little time to make, especially if you are using pre-made pie crust. Make sure the box you grab has 2 crusts in it. The box I used was 15oz and it made approximately 40 pie bites.

Homemade pie dough can also be used for this, but that will add extra time. This recipe is easily made gluten free by using a gluten free pie crust as the filling is already gluten free.

Ingredients for Maple-Bourbon Pumpkin Pie Bites:

  • 1 package refrigerated pie crust (containing 2 crusts) OR homemade pie crust
  • 2 inch circle cookie cutter
  • 1 cup Pumpkin puree
  • 1 egg, beaten
  • 1/3 cup Heavy Whipping Cream
  • 1/3 cup Maple Syrup
  • 1 tsp Pumpkin Pie Spice
  • 1 Tbsp Bourbon

Directions:

  1. Preheat oven to 350°F
  2. On a lightly floured surface, roll out the pie crust to 1/8th inch thick. If using refrigerated pie crust, roll out any wrinkles.
  3. Cut out circles of pie dough using a 2 inch circle cookie cutter.
  4. Place each circle of pie crust in the mini muffin pan
  5. In a medium bowl, combine the pumpkin puree, egg, whipping cream, maple syrup, pumpkin pie spice and bourbon. Mix well.
  6. Place 1/2 Tbsp of filling in each pie crust.
  7. Bake for 25-30 minutes, until dough edges are lightly browned and the pumpkin filling is firm.
  8. Remove from oven and let cool before topping with the cinnamon bourbon whipped cream

To Make Cinnamon Bourbon Whipped Cream

Ingredients:

  • 1 cup Heavy whipping cream
  • 1/4 tsp Cinnamon
  • 1 Tbsp Maple Syrup
  • 1 tsp Bourbon

Directions:

  1. In the bowl of a stand mixer, fitted with the whisk attachment, combine the whipping cream, maple syrup, cinnamon and bourbon.
  2. Whisk on medium speed for about 6-7 minutes, until stiff peaks form.
