Sheet Pan Chicken Fajitas with tortillas

Do you love fajitas? Me too! I also love quick and easy weeknight meals and these sheet pan chicken fajitas are just that. Sheet pan dinners are my favorite because they are simple and have an easy clean up!

These fajitas only take a few minutes to prepare and then bake in the oven for perfect juicy chicken and crisp vegetables. While it is baking, whip up some Spanish Style Rice or some Easy Guacamole to serve with your dinner.

Inspired by a local Mexican restaurant, I added mushrooms to the mix of bell peppers and onion. Tomatoes are also a wonderful addition to fajitas and I often add them as well.

How to Make Sheet Pan Chicken Fajitas

  • Slice chicken and vegetables – make sure to slice in even pieces so they cook evenly
  • Mix together oil and taco seasoning in a small bowl
  • Toss chicken and vegetables with taco seasoning mixture in a large bowl, then spread out on a rimmed sheet pan. A 9×13 pan can be used in a pinch.
  • Bake for 25 minutes
  • Serve with tortillas and desired toppings

  • Diced tomato
  • Salsa
  • Sour Cream
  • Shredded Cheese
  • Lime wedges

Sheet Pan Chicken Fajitas

Total Time: 35 minutes

Chicken, Pepper, Onion, Mushroom tossed with taco seasoning and baked all on one pan for an easy weeknight dinner

Ingredients

  • 3 Tablespoons Olive Oil
  • 2 Tablespoons Taco Seasoning
  • 2.5 Pounds Boneless Chicken Breast, sliced into thin strips
  • 2 Bell Peppers, sliced
  • 1/2 Red Onion, thinly sliced
  • 8 Ounces Sliced Mushrooms

Instructions

  1. Preheat oven to 425°F
  2. Combine the olive oil and taco seasoning together in a small bowl, set aside
  3. Place the sliced chicken and vegetables in a large bowl and pour in the olive oil with taco seasoning. Mix well to coat.
  4. Dump the chicken and vegetable mixture onto a rimmed sheet pan (or 9x13 dish) and spread out evenly
  5. Bake for 25 minutes until chicken is cooked through
