Sheet Pan Sausage, Peppers and Potatoes

I don’t know about you, but I love a quick dinner that has minimal dishes! This one uses one bowl to mix things together and then one pan to cook it. A meal the whole family will love and easy clean up. Sheet Pan Sausage, Peppers and Potatoes dinner comes together quickly and is so versatile.

You can make it low carb by leaving out the potatoes or replacing with another vegetable. It is dairy and gluten free(check your sausage labels). If you use approved sausage, it can be Whole30! Aidell’s is a favorite brand of ours and I have also used Al Fresco. To keep this dairy free, use the chicken and apple sausage as the Italian has cheese in it.

Sheet Pan Sausage, Pepper and Potatoes Ingredients:

Just 7 simple ingredients are needed to make this easy sheet pan dinner.

  • Olive Oil
  • Italian Seasoning
  • Garlic Powder
  • Bell Peppers: any color
  • Red onion: yellow or sweet are also fine
  • Potatoes: Red, yellow or russet
  • Chicken sausage

Directions:

To make this quick and easy dinner, you will need one large mixing bowl and a large sheet pan with sides.

  1. Preheat your oven to 425°F
  2. Chop the peppers, onions and potatoes into bite size pieces and place in the large bowl. Add 1/4 cup of olive oil, 1 teaspoon of Italian seasoning, 1/2 teaspoon Garlic powder and toss to coat. 
  3. Spread the veggies out on the sheet pan and bake for 20 minutes. While the veggies are cooking, chop the sausage into rounds. Remove the pan from the oven, place the sausage rounds on and with a wooden spoon, mix in.
  4. Cook an additional 20-25 minutes, until the potatoes are fork tender and the sausage is slightly browned.

Quick dinner of oven roasted chicken sausage, pepper and potatoes

Ingredients

  • 1/4 cup Olive Oil
  • 1 tsp Italian Seasoning
  • 1/2 teaspoon Garlic Powder
  • 3 Bell Peppers (any color), chopped
  • 1/2 Large Red Onion, Chopped
  • 1 pound Potatoes (red, yellow or russet), Chopped
  • 2 - 12 oz Packages Chicken Sausage (I use Aidells or Al Fresco)

Instructions

  1. Preheat oven to 425°F
  2. In a large bowl, combine the olive oil, seasonings, peppers, onion and potatoes
  3. Toss to combine and place on large rimmed baking sheet
  4. Place in oven and bake for 20 minutes
  5. While the veggies are baking, slice the sausage into rounds
  6. Remove veggies from oven and add the sausage. Using a wooden spoon, toss to combine
  7. Place back in oven and bake for 20 minutes
  8. Test the potatoes to ensure fork tender and remove from oven
