Lasagna Roll Ups

Perfectly portioned Lasagna Roll Ups are your next weeknight dinner hit! These are easy to make and fun to serve. Family friendly yet special enough to serve to guests. My kids love them and gobble them up!

Lasagna Roll Ups are a great way to sneak in some healthy twists and extra veggies. I used whole wheat noodles and added fresh chopped spinach to the ricotta mixture. I love when my kids cant see or pick out the veggies!

For this recipe, I used a blend of Italian sausage and lean ground beef. I find that there is plenty of fat in the sausage that the lean beef pulls back on the grease content. Plus I just love the combo and it is what I use to make meatballs too!

Ingredients for Lasagna Roll Ups:

  • Lasagna Noodles
  • Italian Sausage
  • Lean Ground Beef
  • Large Onion
  • Garlic Cloves
  • Marinara Sauce
  • Ricotta Cheese
  • Egg
  • Shredded Parmesan
  • Italian Seasoning
  • Fresh Parsley
  • Fresh Spinach
  • Shredded Mozzarella

Directions:

  1. Preheating your oven to 350°F and place a long sheet of parchment paper on your work space.
  2. Boil the noodles according to package directions to Al dente. Drain and then lay each noodle out on the parchment paper side by side.
  3. Place approximately 1 cup of the marinara in the bottom of a 9×13 pan and spread out evenly. Set aside.
  4. Heat a large pan over medium-high heat and add the sausage, beef, onion and garlic. While the meat is browning, combine the ricotta, Parmesan, egg, Italian seasoning, spinach and parsley in a small bowl and set aside.
  5. Once meat is cooked through, turn the heat to low and add the remaining marinara sauce. Remove from heat once the sauce is warmed.
  6. Top each noodle with 2 tablespoons of the ricotta mixture and spread out. Place 2 tablespoons of meat sauce over the ricotta and spread out evenly.
  7. Roll up each noodle and place seam side down in your prepared baking dish. Pour remaining sauce over the noodles and top with 1 cup of shredded mozzarella cheese. 
  8. Cover with foil and bake 30-40 minutes until bubbly.

Serve with a side salad and my Homemade Garlic knots!

Individual rolled up lasagna noodles, topped with ricotta and meat sauce

Ingredients

  • 12 Lasagna Noodles
  • 1/2 Large Onion, diced
  • 2-3 Garlic Cloves, minced
  • 1/2 lb Lean Ground Beef
  • 1/2 lb Italian Sausage
  • 1 24 oz Jar of Marinara Sauce
  • 1 15 oz Container Ricotta
  • 1 Egg, beaten
  • 1/2 cup Shredded Parmesan
  • 1 tbs Fresh Parsley, chopped
  • 1 tsp Italian Seasoning
  • 3/4-1 cup Fresh Spinach, chopped

Instructions

  1. Preheat your oven to 350°F and place a large piece of parchment paper on your workspace
  2. Place approximately 1 cup of the marinara sauce in the bottom of a 9x13 baking dish and spread out evenly over the bottom. Set aside.
  3. Cook the lasagna noodles according to package directions to Al Dente
  4. Drain the cooked noodles and then lay them out, side by side, on a large piece of parchment paper
  5. In a large pan over Medium-High heat, brown the beef and sausage with the onion and garlic
  6. While the meat is browning, combine the ricotta, parmesan, egg, italian seasoning, spinach and parsley in a small bowl. Set Aside.
  7. Once cooked through, reduce heat to low and add remaining marinara sauce. Once sauce is heated, set aside
  8. Place approximately 2 TBS of the ricotta mixture over the each noodle and spread out evenly
  9. Top each noodle with 2 TBS of meat sauce and spread out over the ricotta
  10. Roll each noodle up and place seam side down in your prepared 9x13 dish
  11. Pour remaining sauce over top of the noodles and top with 1 cup shredded mozzarella
  12. Cover with foil and bake 30-40 minutes, until bubbly
