Air Fryer Breakfast Pockets

These air fryer breakfast pockets are my new go to. They are made with a quick and easy no yeast dough.  The main ingredients are all-purpose flour and non-fat Greek yogurt. Add in baking powder plus salt and you’re done. Easy. 

You can even make up the dough before hand and store it in the fridge until you’re ready.  No yeast and no rise time. Doesn’t get better than that! You can also sub in self-rising flour and eliminate the baking powder and salt. 

Ingredients for Air Fryer Breakfast Pockets:

  • 1 cup All-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup Non-fat Greek Yogurt
  • 4 eggs, cooked and scrambled
  • 4 slices bacon, cooked and crumbled
  • 1/4 cup shredded cheese

Directions to make breakfast pockets

  1. Prepare your filling ingredients.
  2. Preheat your air fryer to 360°F.
  3. Whisk together the flour, baking powder, and salt.
  4. Add in the yogurt and combine until a shaggy dough forms. 
  5. Turn out onto a lightly floured surface and knead until a soft dough forms. 
  6. Shape the dough into a circle and then divide into 4 equal pieces.
  7. Roll each one out into 4-6 inch circles. 
  8. Fill each one with 1/4 of the scrambled eggs, top with bacon and 1 tablespoon of cheese. Roll up into a burrito shape (or half moon)
  9. Lightly spray the air fryer tray with oil (I love using Pompeian Organic EVOO Non-Stick Cooking Spray)
  10. Working in batches, place the breakfast pockets seam side down in the air fryer and spray the tops with oil.
  11. Bake for 5 minutes, turn the pockets over and bake an additional 5 minutes until golden and puffy.

Filling variations for Air Fryer Breakfast Pockets:

  • Meats: Sausage, Ham, Bacon, Turkey Bacon
  • Veggies: Peppers, Onion, Scallions, Mushrooms, Spinach 
  • Cheeses: Cheddar, Swiss, Havarti, Mozzarella, Feta

Air Fryer Breakfast Pockets

Cook Time: 10 minutes
Total Time: 20 minutes

A quick and easy dough, filled with eggs, bacon and cheese, then baked in an air fryer

Ingredients

Dough

  • 1 cup All-Purpose Flour
  • 1 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1 cup Non-fat Greek Yogurt

Filling

  • 4 Eggs, cooked, scrambled
  • 4 slices Bacon, cooked and crumbled
  • 1/4 cup Shredded Cheese

Instructions

  1. Pre-Heat air fryer to 360°F

To make the Dough

  1. Whisk together flour, baking powder and salt
  2. Add in yogurt, mix together with spatula until combined
  3. Place dough on lightly floured surface and knead until a soft dough forms. It will be tacky, but should not stick to your hands.

To make Pockets

  1. Divide the dough into 4 equal pieces
  2. Roll each out into a 4-6 inch circle
  3. Place 1/4 of the scrambled eggs on each dough circle
  4. Top with crumbled bacon and 1 tablespoon of cheese
  5. Fold up each side into a burrito shape and place seam side down
  6. Lightly spray the air fryer tray with oil
  7. Working in batches, place the pockets seam side down and lightly spray the tops with oil
  8. Cook for 5 minutes, Turn the pockets over and cook an additional 5 minutes until golden brown and puffy

Notes

  • You can sub in Self-Rising flour for all-purpose and eliminate the baking powder and salt
  • You can make these into a burrito shape or even a half moon. Whatever works for you! Just make sure there are no gaps, or the cheese will leak out.
  • These were made with turkey bacon and fiesta cheese, but you can get creative with your fillings!
