Candy Corn Fruit Parfait

A delicious, tropical and healthy treat for Halloween! This Candy Corn Fruit Parfait has layers of pineapple chunks, orange slices and yogurt topped with coconut flakes.

Want to know a secret? I am not a fan of candy corn. I said it and I’m not sorry. I’m a chocolate lover through and through. However, a fruit cup with yogurt that looks like candy corn? I can do that!

If you’re looking for a healthier alternative for a fun Halloween treat, then give these candy corn fruit parfaits a try! There is so much candy and sugary treats around Halloween that I am always looking for ways to serve up something healthier.

Pineapple and orange are a great, tropical flavor and make you feel like its summer time again! Topped with yogurt and coconut flakes for a delicious treat that won’t leave you in a sugar coma!

Ingredients for Candy Corn Fruit parfait

You can make this easy Halloween treat with just 4 simple ingredients!

You will need:

  • Pineapple – Fresh pineapple or Canned pineapple tidbits (in their own juice)
  • Orange – Canned mandarin oranges (in their own juice)
  • Yogurt – I use whole plain milk yogurt or Greek yogurt (it’s what we buy), but you can use your favorite variety
  • Coconut Flakes – Look for unsweetened flakes to avoid added sugars
  • Candy Corn – Optional as a garnish

Assembling the fruit parfait

This Halloween treat could not be any easier to assemble! I used 5 ounce glass jars. Small mason jars can also be used.

If using fresh pineapple, dice into small 1/2 inch pieces. For canned pineapple, drain the juices. You can save the juice for another recipe (Like my Pineapple Mint Vodka Fizz)!

Drain the mandarin oranges or if using fresh clementines, peel, separate the wedges and cut in half.

In the glass jar, place 1/4 cup of the pineapple on the bottom. Layer 1/4 cup of the orange wedges on top.

Top with 1/4 cup of yogurt and sprinkle coconut flakes on top.

Garnish with a piece of Candy Corn if desired.

Tips and Substitutions

  • Any type of yogurt will work. I used plain whole milk yogurt, but Greek or Vanilla flavored can be used.
  • Make it dairy free by using soy or coconut yogurt
  • Fresh or canned (tidbits) pineapple can be used here.
  • I used canned mandarin oranges. Fresh clementine would work as a substitute.

Ingredients

  • 1 cup Pineapple, diced
  • 10.5 ounce can Mandarin Oranges, drained
  • 1 cup Yogurt
  • 2 Tablespoons Coconut Flakes, unsweetened

Instructions

  1. In a glass cup or mason jar, place 1/4 cup of the pineapple in the bottom.
  2. Layer 1/4 cup of the mandarin oranges on top.
  3. Place 1/4 cup of yogurt on the fruit and sprinkle 1/2 tablespoon of coconut flakes.
  4. Garnish with candy corn if desired
  5. Serve immediately

Notes

  • Plain, Greek, vanilla or non dairy yogurt can be used.
  • Canned pineapple tidbits (in their own juice) may be substituted for fresh.
  • Clementines (such as Halo brand) can replace the mandarin oranges if desired.
  • I used 5 ounce glass jars. 8 ounce mason jars would also work well, but ingredient amounts will need to increase for each parfait.
